Tiramasu Cups

Tiramasu is such a light and rich dessert. I love these cup versions because you get sizable cream in every bite. Such a refreshing and cool dessert for a hot day.
Prep time: 30 mins and Chill for a few hours

Ingredients

¾ cup heavy cream

4 ounces mascarpone cheese, room temperature

¼ cup sugar

½ teaspoon vanilla extract

½ cup coffee, room temperature

1 package snickerdoodle cookies

Cocoa powder to sprinkle on top

Equipment

Measuring cups and spoons

Handheld electric mixer

Medium bowl

Small shallow bowl

Spatula 

Serving cups

Ice cream scoop

Sieve


How to……

In a medium bowl, using the handheld electric mixer beat the heavy cream until soft peaks form. Slowly add the sugar and continue beating. The peaks will become stiff. Add the vanilla extract and beat. Fold in the mascarpone cheese with the spatula.

Put the coffee in a small shallow bowl. Dip a cookie into the coffee and then place it in the bottom of the serving cup. Repeat until the base of the cup is lined with cookies.

Using an ice cream scoop, put a dollop of the cream mixture on top of the cookies. Add another layer of cookies on top of the cream. Follow this by adding a layer of cream to the brim of the cup.

Dust cocoa powder generously over the top with a sieve.

Refrigerate for a few hours before serving.
