Tiramasu is such a light and rich dessert. This is one of my go to desserts on a hot summer day. The chilly cream combined with the soft lady fingers is a delight!
Prep time: 30 mins and Chill for a few hours

Ingredients

1 ½ cup heavy cream

8 ounces mascarpone cheese, room temperature

1/2 cup sugar

1 teaspoon vanilla extract

1 cup coffee, room temperature

1 package ladies fingers

Cocoa powder to sprinkle on top

Equipment

Measuring cups and spoons

Handheld electric mixer

Medium bowl

Medium shallow bowl

Spatula 

8 by 4 inch serving dish

Ice cream scoop

Sieve


How to……

In a medium bowl, using the handheld electric mixer beat the heavy cream until soft peaks form. Slowly add the sugar and continue beating. The peaks will become stiff. Add the vanilla extract and beat. Fold in the mascarpone cheese with the spatula.

Put the coffee in a medium shallow bowl. Dip the lady finger into the coffee and then place it in the bottom of the serving cup. Repeat until the base of the serving disch is lined with the ladies fingers.

Using an ice cream scoop, put a dollop of the cream mixture on top of the cookies. Add another layer of lady fingers on top of the cream. Follow this by adding a layer of cream to the brim of the serving dish.

Dust cocoa powder generously over the top with a sieve.

Refrigerate for a few hours before serving.
