Mini Vanilla Bundt Cakes

These cakes are so much fun, and great for when your kids come together or for a party. Kids love them because they’re so soft, and just melt away as soon as bitten into, and then that cuteness of the mini-size. You can also use different decorations..colored sprinkles, nuts..whatever you wish!
Prep time: 20 mins – Cook time: 15-20 mins – Total time: 35-40 mins

Ingredients:

Cake

  • 1 cup sugar
  • ½ cup butter
  • 2 eggs
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 ½ cups flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk

Equipment:

Measuring cups and spoons
5 mini cake pans any shape well buttered and floured
Standing or hand held electric whisk
1 large bowl if you’re using a handheld electric whisk
1 medium bowl if you’re using a handheld electric whisk

How to…..

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.

Make sure your cake pans are well buttered and floured -every crevice- so the cake doesn’t stick and comes out easily once done.

With an electric whisk cream together the sugar and butter until creamy. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour into the pans, the batter should fill 3/4 of the pan so you give it room to rise.

Bake for 15-20 minutes. 

Pour Chocolate and caramel sauce after the cakes cool down and you put them on the platter of choice. You can decorate with cream, powdered sugar or sprinkles – as you wish.
