Dates are for every occasion; they’re healthy but sweet; they take so many forms and have so many tastes when cooked. This pudding is rich and creamy and is the perfect dish for a mid-day get together, or late afternoon as you get ready to enjoy the sunset.
Prep time: 10 mins – Cook time: 15 mins – Total time: 25 mins
Ingredients:
- 20 pitted dates (hard dates)
- 2 teaspoons bicarbonate soda
- ½ teaspoon salt
- Water
- Coconut flakes (optional)

How to…..
Boil the dates (water should completely cover the dates) with the bicarbonate soda and salt. Let it boil for several minutes until the dates are soft and the mixture starts to thicken. Once the mixture is thick, remove from the stove top and blend with a hand blender until smooth. Serve in individual bowls or one large bowl.
I topped mine with coconut flakes and date pieces, but that’s optional and you can use any topping you wish.
