Chocolate Cupcakes with Chocolate Buttercream Icing

Cupcakes are so much fun. I love making them for the little ones in the family. They’re soft, moist, with yummy buttercream, and just all round cuteness.
Prep time: 45 mins – Cook time: 20-25 mins – Total time: 65-70 mins

Ingredients:

Cupcakes

  • 1 ½ cups flour
  • 1/2 cup sugar
  • ¾ cup cups cocoa
  • ½  tablespoon baking soda
  • ¾  teaspoon baking powder
  • 1 teaspoon salt
  • 2 eggs
  • ¾ cups buttermilk
  • ¾ cups hot water
  • 1/4 cup oil

Equipment:

12 hole muffin pan
Electric whisk (standing preferred for the icing; for the cupcakes handheld will do)
1 large bowl
Piping bag or palette knife
Cupcake paper liners

How to…..

Preheat oven to 350F/176 C. 

Line the muffin pan with cupcake paper cups or silicon cups.

Cupcakes

Mix all the dry ingredients. Then add the wet ingredients and mix with a handheld electric whisk. Pour into the muffin pan and bake for 20-25 mins at 350 F/176 C.

Assembly:

You can use a piping bag to add the frosting like I did in these photos. The other option is to use a palette knife. To do that, hold the cupcake in your hand. Take a generous amount of buttercream with a palette knife. Put the dollop of icing in the middle of the cupcake and then swirl around with the palette knife and lift the knife upwards when you go all around the cupcake.
