These are so soft, and if you eat them warm the chocolate chops are slightly melted and give you that one of a kind warm feeling. I get repeated requests from friends for these cookies, and they’re the perfect everyday cookies. I always like to have a few in the cookie jar on the counter for anyone that drops by…or for me.
Prep time: 20 mins – Cook time: 8-10 mins – Total time: 30 mins

Makes about 30 cookies.

Ingredients:

  • 2 1/4 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup butter
  • ½ cup sugar
  • ½ cup light brown sugar
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 cups semisweet chocolate chips

Equipment:

Measuring cups and spoons
2 large bowls
Electric whisk (standing preferable)
2 baking sheets lined with parchment paper, or buttered and floured
Spatula or Mixing Spoon
Wire Rack (if you have one)

How to…..

Preheat oven to 375 degrees Fahrenheit/176 degrees Celsius

Mix the flour, baking powder and salt in a bowl.

Beat with the electric mixer the butter, sugars and vanilla until they are light and fluffy. Add the eggs one at a time and keep beating until well combined. Put the mixer on low and gradually add the flour mixture. Fold in the chocolate chips with a spatula.

Take about one tablespoon full of dough and round it up, and place on the baking tray. Put them about 2 inches/1.5 cm apart as they will grow in size while baking. Bake for about 8-10 minutes. They should still be soft in the middle when you remove from the oven. Let them cool completely on a wire rack.
