The ladies in the family come together to decorate the cookies while sipping tea and gossiping. With all that joy, comes a beautiful collection of biscuits of different shapes and decorations. Betefour is colorful and fun, and every time we serve a tray we have guests peeking around searching for that shape and icing they love. They are a light and crispy delight to eat. 
Prep time: 50 mins (including chilling) – Cook time: 12 mins – Total time: 62 mins

Ingredients:

  • 2 cups minus 2 teaspoons flour
  • 1 cup ghee
  • 1/2 cup powdered sugar
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 teaspoons cocoa

Equipment:

Measuring cups and spoons
Electric hand held whisk
2 large bowls
Cookie cutters (any shape you want)
1-2 baking trays

How to…..

Preheat oven to 350 degrees Fahrenheit / 176 degrees Celsius.

Soften the ghee and add to it the powdered sugar. Mix them well with a hand mixer. Then add the two eggs and vanilla and continue mixing. Mix the sifted flour and baking powder together and add the dry ingredients to the wet ingredients. Divide your mix into two equal portions. To one portion add the cocoa and mix by hand. Put the two portions in two bowls and cover. Refrigerate for 30 mins.

Remove from the fridge and use the cookie cutter to shape. Place them on the baking trays and bake for about 12 minutes. They will still be a bit soft, but will firm up after you remove them from the oven.

I decorated them with melted chocolate and colored sugar glaze.
