I like to snack on these. They’re thin and light to bite on. I love having them sitting around in a container for everyone to snack on. Add a cup of tea or coffee to the mix, and you’re set.
Prep time: 15 mins – Cook time: 10 mins – Total time: 25 mins
Ingredients:
- 2 cups almond flour
- ½ cup smooth peanut butter
- ¼ cup maple syrup
- 2 teaspoons vanilla extract

Large baking sheet, lined with parchment paper |
1 medium bowl |
Engraved cookie cutter (or fork) |

How to…..
Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.
Line a baking sheet with parchment paper.
In a medium bowl mix all the ingredients until well combined.
Round the dough into balls (about 1 tablespoon each). Place on the baking sheet. Using an engraved cookie cutter, press gently down on each ball. Alternatively, you can use a fork and make a crisscross shape over the cookies.
Bake for 10 minutes. Remove and let them cool completely on a wire rack.
