Baklava Cake

You get the best of both worlds with this mix of a baklava base and crumbly cake. I love the crunch of the nuts. Delicious and filling without the need to make any frosting. This is for nuts lovers out there.

Ingredients

Cake

 ½ cup yoghurt

½ cup vegetable oil

¼ cup milk

2 eggs

1½ cups flour

1½ teaspoon baking powder

½ teaspoon baking soda

1 teaspoon vanilla extract

¼ teaspoon salt

½ cup sugar

Topping

1 1/2 cups walnuts, roughly chopped into small pieces

1/2 cup pistachios, roughly chopped into small pieces

3 teaspoons cinnamon

5 tablespoons melted butter

¼ cup brown sugar

¼ cup maple syrup

¼ teaspoon salt

Equipment

Measuring cups and spoons
Medium heatproof pan
 
Large bowl (if you’re using a handheld whisk)
 
Handheld electric whisk (or standing mixer)
 
8 inch cake pan, lined with parchment paper

How to…..

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.

Topping

Melt the butter in a medium sized heat proof pan over medium heat. Add the honey and sugar and mix them into the butter until the sugar dissolves. Add the walnuts, pistachios and cinnamon and mix well with a spatula. The mixture will become thick. Set it aside as you make the cake.

Cake

In a large bowl (or in the bowl of a standing mixer), beat the sugar and wet ingredients using a handheld electric whisk. Beat them just until well combined.

Add the dry ingredients and mix with a spatula until well combined.

Now bring your parchment lined cake pan.

Place about 4 tablespoons of the topping onto the lined cake pan. Spread it out with the spatula until its evenly spread. 

Pour half of the cake mixture over the topping. Make sure it spreads out all around the cake pan.

Gently place in dollops the remaining topping on top of the cake batter. Pour the remaining cake batter on top.

Bake for 30-35 minutes. Remove from the oven and let it cool for 5 minutes in the pan. After five minutes, run a knife along the sides of the cake to loosen it.

Place the serving plate over the cake pan and flip the cake over onto the plate. Gently remove the parchment paper. Some nuts may remain sticking to the parchment paper. Use a spoon or knife to scoop them out and place them on the cake.
