Vanilla Cupcakes with Cream Cheese Frosting

Vanilla cupcakes are one of those classic bakes that are always craved. This is such an easy recipe – mix all teh wet ingredients together, all the dry ingredients together and combine them! and what you get is soft, fluffy and tasty cupcakes. I used cream cheese frosting here, but they are equally good with chocolate or vanilla buttercream frosting. And if you don’t want that extra sweetness, then don’t go for any frosting. Enjoy!

Ingredients:

  • ½ cup butter, melted
  • 1/2 cup sugar
  • 3 egg whites
  • 1 1/2 tsp baking powder
  • 1/2 cup yoghurt or sour cream
  • 1 1/2 tsp vanilla extract
  • 1/2 cup milk, room temperature
  • 1 2/3 cup flour
  • 1/4 tsp salt
  • 1/4 tsp bicarbonate of soda
  • Sprinkles of peppermint candy

Equipment:

Measuring cups and spoons
12 hole muffin pan
Cupcake paper liners or silicon cups
2 Medium bowls
Standing electric whisk
Piping bag or palette knife

How to…..

Preheat the oven to 350 degrees Fahrenheit/ 176°C. Line the muffin pan with the cupcake liners.

In a medium bowl, mix all the dry ingredients together.

Mix butter and sugar with an electric mixer on medium speed until light and fluffy. Turn the mixer up to high speed, slowly add the eggs and beat until well incorporated.

In another medium bowl whisk together the wet ingredients until well combined.

Add the wet ingredients to the dry ingredients and mix well until you have a smooth batter.

Pour into the cupcake holes, filling each one a little over halfway up to give it room to rise. Bake for 20-25 minutes or until a toothpick comes out dry. Let them cool for 5-10 minutes, and then remove from the tray to cool completely. Frost with the cream cheese frosting using a palette knife or piping bag. Sprinkle with the candy bits…or not!
