Brownie Cookies

I like to snack on these…they don’t make me feel guilty because they’re a thin version of brownies! They’re the perfect cookie for chocolate lovers – imagine the combination of cookies and brownies! So easy to make, and great to have on the kitchen counter for that perfect snack.
Prep time: 15 mins – Chill time: 60 mins – Cook time: 10 -12 mins – Total time: 85 mins

Ingredients:

  • 1cup flour
  • ¼ cup cocoa
  • 6 ounces semi-sweet chocolate
  • 1/2 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup butter (or slightly less), melted
  • ¼ cup brown sugar
  • 2 eggs, room temperature

Equipment:

Measuring cups and spoons
1 large bowl
1 medium bowl
Electric whisk (handheld or standing)
Large baking sheet, lined with parchment paper or buttered and floured

How to…..

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.

Mix the flour, cocoa, baking soda, baking powder and salt in a large bowl.

Melt the chocolate in 30 second increments in the microwave.

With a handheld electric whist beat the butter and brown sugar until pale and fluffy. Add the eggs and beat until creamy. Add the melted chocolate and mix until well combined.

With the speed on low, add the flour mixture and beat until combined.

Take about a tablespoon each place on the baking sheet. Keep the cookies about 2 inches apart. Repeat until you use all the dough is used. Press down on each one, flattening them a little.

Bake them for about 10-12 minutes. They should be cracked on top and still soft.

Remove from the oven and let them cool completely.
