Fudgy Brownies topped with Chocolate Chips

Rich, decadent, dense chocolate taste is what this is. I love fudgy brownies – they just make me so happy! I’m constantly making these..because someone is always asking for them. I personally know its that taste of the dense chocolate that once you bite into, it brings on that “feel-good” feeling which we all need! Topped with chocolate chips – it’s just the best!
Prep time: 20 mins – Cook time: 30 mins – Total time: 50 mins

Ingredients:

  • 3/4 cup melted butter
  • 150 grams chocolate
  • 2 tablespoons and 1/4 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup flour minus 1 tablespoon
  • 1 tablespoon cornflour
  • 1 cup chopped walnuts (optional)
  • 1/2 cup chocolate chips

Equipment:

Measuring cups and spoons
Kitchen Scale
Standing or Handheld electric whisk
1 large bowl
Spatula
7*7 inch / 18 * 18 cm square baking pan lined with parchment paper

How to…..

Preheat the oven to 350 F/176 C.

In a bowl mix the chocolate and 2 tablespoons cocoa.

Melt the butter and add to the chocolate mixture while it’s hot. Mix it with the spatula until the chocolate is melted and it’s well combined. Set aside.

In a large bowl, beat with a handheld electric mixer (or in the bowl of a standing mixer), add the sugars, vanilla extract and eggs. Beat well until creamy.

Add in the chocolate mixture and mix on medium low until well combined.

Add the flour and 1/4 cup cocoa powder and mix until just combined.

Mix in the walnuts by hand. Pour into the prepared baking dish and then sprinkle the chocolate chips on top. Press down on the chocolate chips slightly so they sink a tiny bit into the batter.

Bake for 25-30 mins.

Watch them carefully and test them with a toothpick at 25 minutes. You want the toothpick to come out with a few crumbs – that’s when it’s ready and fudgy. Don’t forget that it will continue to cook when you remove it from the oven, so don’t hesitate to take them out of the oven when the toothpick still has crumbs – like I did many times and regret it every time! Serve warm or cool. You can serve them with ice cream on a hot summer day!

The walnuts are optional, but I personally love my brownies with walnuts. I like that crunch addition.
