Oreo Bottomed Vanilla Cupcakes

What I love about oreos is how you can use them in so different ways while baking. They go so well with most bakes, and add that lovely crunch. To top it off, I added chocolate caramel candy in the center of the cupcake as well and topped it off with chocolate frosting. You will see the chocolate frosting here is a darker shade, and that’s because I used both regular and black cocoa. If you prefer the regular brownish cocoa color, then just follow the chocolate frosting as is. If you want the dark color use more black cocoa than the regular.

Ingredients:

Cupcakes:

  • 1 2/3 cups flour
  • 1 cup sugar
  • 1/4 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, melted
  • 3 egg whites
  • 1 tbsp vanilla
  • 1/2 cup sour cream, room temperature (you can substitute with yogurt)
  • 1/2 cup warm milk
  • 24 thin oreo cookies (you can use 1 regular oreo cookies instead of two thin ones)
  • 24 chocolate caramel candies (store bought)

Equipment:

12 hole muffin pan
Cupcake paper cups
2 large bowls
Electric mixer
Piping bag
Scale

How to…..

Preheat oven to 350 degrees F/176 degrees C. Place cupcake liners in a muffin pan.

Cupcakes

Sift the flour, sugar, salt, baking soda and baking powder into a large bowl.

In another bowl, whisk together the wet ingredients until combined.

Add the wet ingredients to the dry ingredients and mix until well combined.

Place two thin oreo cookies in the bottom of each cupcake liner. Then pour batter into the cupcake liners, filling each about a little more than ½ way up. Dip one chocolate caramel candy into the center of the cupcake pressing it down until its just covered.

Bake for about 20 minutes or until a toothpick comes out dry. Let the cupcakes cool completely.

While the cupcakes are cooling down, make the chocolate frosting.

Note: You may have leftover oreo cookies and candy.

Chocolate Frosting

Put the frosting in a piping bag with a rounded tip and pipe onto each cupcake. I decorated the cupcakes with a sprinkle of edible flowers, but you can do without them or use any decorations you like. You can also use other piping tips to your liking.
