You want dessert heaven? You want cream cheese combined with rich chocolate and raspberry sauce all over the place? Look no further. I don’t know who originally thought of combining cheesecake and brownies, but they are my hero! This is such a burst of all the different flavors and textures mixed into one. Try something new and make this if you haven’t before…trust me you won’t regret it!
Prep time: 30 mins – Cook time: 30-40 mins – Total time: 70 mins – Chilling time: Overnight

Ingredients:

Brownies

  • ½ cup melted butter
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • ½ cup semi sweet melted chocolate
  • ¾ cup flour
  • 1/3 cup cocoa powder
  • ½ teaspoon salt

Cheesecake

  • 400 grams cream cheese
  • ½ cup sugar
  • ½ teaspoon vanilla extract
  • 2 eggs

Raspberry Sauce

  • 6 raspberries
  • ½ cup powdered sugar

Decoration

  • Raspberries (handful or more or none!)

Equipment:

Measuring cups and spoons
Handheld electric whisk
2 large bowls
1 medium bowl
Scale
6 inch/15 cm round cake pan

How to…..

Preheat the oven to 350 degrees Fahrenheit/176 degrees Celsius.

Brownies

In a bowl mix the melted butter and sugar with a handheld electric whisk until well combined. Add the eggs and vanilla and whisk them just until combined. Add the melted chocolate and whisk them until smooth. Stir in by hand the flour, cocoa powder and salt. Pour into the pan, and now make the cheesecake.

Cheesecake

Mix with an electric whisk (on low) the cream cheese, sugar and vanilla until smooth and well combined. It should thicken. Add the eggs one at a time and continue to mix until smooth and creamy. You can turn the mixer up to medium-high for a few seconds to bring it all together.

Pour the mixture over the brownie and smooth with a spoon or spatula. Bake for 30-40 minutes until its firm when you touch it. Remove from the oven and let it cool completely at room temperature. Then chill overnight in the fridge.

Raspberry Topping

Put 6 raspberries in a medium bowl and press down with a spoon to squeeze out the liquid. You can puree them slightly with a hand blender. If you still have chunks of raspberry, remove these and just leave the juice and seeds. Add the powdered sugar and mix. Then pour over the cheesecake brownie.

Throw some raspberries on top to decorate (optional).
